Not one of my finest ideas. I decided it would be fun at 10pm to bake a Mexican treat for work tomorrow to celebrate cinco de mayo and the fact that it was Friday.
This is why at 11:16pm I am finally staring at my Mexican Vanilla Pineapple Pound Cake. Sounded good, until I realized I had no clue what Mexican vanilla was and I just went with regular vanilla. So now there really is nothing Mexico-y at ALL about this loaf of dough. And it smells gross. :( well. I suppose Mexican vanilla was maybe an important ingredient in Mexican pound cake. Well. Either way I made a pound cake that is lumpy with pineapple and took FOREVER to bake. Shoulda stuck with making churros. Live and learn :)
